In Buddhism, it is believed that vegetarianism without killing animals is a manifestation of virtue and good deeds, which makes people feel smooth and safe in everything, and therefore contributes to longevity. However, in real life, vegetarians are mainly vegetables, fruits and vitamins, with a very low amount of fat (saturated fat).

Many vegetarians have their medical functions: for example, kidney beans have beauty and skin care; White gourd can relieve heat and thirst and lose weight; Tofu can reduce cholesterol in blood, reduce the risk of heart disease, and prevent senile dementia; Soybean prevents gastric cancer; wait

According to a reliable study, Japanese men who often eat soybeans have a lower risk of prostate cancer than Western men. Therefore, vegetarians not only need not bear the lack of vitamins but also protect various functions of the body. However, it should also be noted that parents who have children who are also vegetarian should pay special attention to ensuring that their children get a nutritious diet.

The American Dietetic Association (ADA) believes that a properly formulated vegetarian diet is beneficial to health, adequate nutrition, and prevention and treatment of certain diseases. There is a positive correlation between vegetarianism and reducing the risk and symptoms of some chronic diseases. These chronic diseases are obesity, coronary heart disease, hypertension, diabetes and some cancers. The reason why vegetarianism prevents diseases is that the content of saturated fat, cholesterol and animal protein in vegetarianism is relatively low, while the concentration of folic acid (which can reduce the level of homocysteine in serum), antioxidants such as vitamin C and E, carotenoids and phytochemicals is relatively high. Not only is the incidence rate of coronary artery disease of vegetarians lower than that of non vegetarians, but vegetarians are also successful in controlling coronary heart disease. Vegetarians generally have low levels of total serum cholesterol and low density lipoprotein cholesterol.

Vegetarians tend to have a lower incidence rate of hypertension than non vegetarians. Compared with non vegetarians, vegetarians are much less likely to die from type II diabetes, which may be due to the higher intake of complex carbohydrates by vegetarians. The incidence rate of lung cancer, colorectal cancer in vegetarians is lower than that in non vegetarians. Reducing the risk of colon and rectal cancer is related to increasing the consumption of fiber, vegetables and fruits. Among western vegetarians, there is no case that the incidence rate of breast cancer is lower than that of other groups, but the data from cross-cultural comparative studies show that the incidence rate of breast cancer is lower among vegetarians. The lower estrogen level of vegetarian women can prevent breast cancer. A properly formulated vegetarian diet can help prevent kidney disease.

   在佛教中认为,食素不杀生,是积德行善的表现,会使人感到事事顺利,平安、因此有助于长寿。然而在现实生活中,素食主要是蔬菜、水果、维生素,含脂肪(饱和脂肪)量极低。

   许多素食有它们的医疗作用:如四季豆有美容护肤;冬瓜有消暑解渴减肥;豆腐有降低血中胆固醇的作用,减少患心脏疾病的机率,还有预防老年疾呆症;大豆防胃癌;等等

   奥尼什博士在其著作《心脏病治疗计划》中写到,心脏病患者在素食、运动和压力减轻法的配合下,一年不到,病情就大为好转,面且比接受手术或大量吃药的患者体能更佳。

   据一份可靠的研究表明,常吃黄豆类食物的日本男性,患摄护腺癌的机率比西方男人低。所以素食者不但不用担缺少维生素还有保护身体各种机能作用。但也要注意让孩子也吃素的父母尤其要注意,一定要确保孩子得到营养的饮食。

 

 

  美国饮食协会(ADA)认为,适当调配的素食有益于健康,有足够的营养,而且有益于预防和治疗某些疾病。素食与减少某些慢性病的危险性及其症状之间存在正相关关系。这些慢性病是:肥胖症、冠心病、高血压、糖尿病和某些癌症。素食之所以预防疾病,是因为素食中的饱和脂肪、胆固醇和动物蛋白含量比较低,而叶酸(能够降低血清中的高半胱氨酸水平)、维生素C和E等抗氧化剂、类胡萝卜素和植物化学成分的浓度比较高。不仅素食者冠状动脉疾病的发病率比非素食者低,而且素食在控制冠心病方面也是成功的。素食者的总血清胆固醇和低密度脂蛋白胆固醇水平通常较低。

 素食者的高血压症发病率往往比非素食者低。素食者与非素食者相比,Ⅱ型糖尿病致死的概率要低得多,原因可能是素食者复合碳水化合物摄入量较高。素食者的肺癌和结肠、直肠癌的发病率比非素食者低。减少患结肠、直肠癌的危险跟增加纤维、蔬菜和水果的消费有关。在西方素食者中,没有发现乳腺癌发病率比其他群体低的情况,但跨文化比较研究的数据表明,在以素食为主的人群中乳腺癌的发病率较低。素食妇女较低的雌激素水平可以对乳腺癌起到预防作用。适当调配的素食有助于预防肾病。
